Pumpkin Protein Pancake Recipe

1 cup rolled oats
¾ egg whites (or 3 whole eggs)
½ cup cottage cheese
¼ cup pumpkin puree
1 tbsp. maple syrup
1 tsp. pumpkin pie spice

Directions:
Pop everything into the blender and blend until you have a pancake-like batter.

Heat a nonstick skillet over a medium heat. Lightly coat the pan with coconut oil or cooking spray and drop ¼ cup rounds of batter onto the pan. Cook until edges are bubbling and then flip and cook another two minutes or until edges are golden brown and pancakes are cooked though.

Makes 2 servings.

  3. Not faulting you on this but FYI most canned pumpkin is not pumpkin at all, but squash. One american major store brand developed their own strain of squash. Don't know how they get away with calling it pumpkin both on label and contents.

  5. I look forward to trying this recipe. I missed the Facebook live version, but I thought I'd let you know that I am from Northwest Florida and my favorite breakfast to make is a frittata. I use whatever leftovers I have, saute them, then add the the beaten egg mixture and top with some cheese. This is definitely not an everday breakfast meal, but is o eI use for leftovers. I cut the pieces like pizza slices, put them in baggies and place in the fridge or freezer. Also, my favorite tool is used to break up groundbeef when browning it. I will try to find a pic of it. Thanks for all you do! I have learned so much from you!!

  13. Here in Germany, I buy frozen cubed pumpkin and make my own puree. It is difficult to find canned pumpkin here, but frozen pumkin and fresh are plentiful. I also make my own pumpkin pie spice since it is not available here.

  14. Could tofu be substituted for the cottage cheese? I need good dairy and oat substitutes (eggs are fine). Could almond flour work?
